Frozen vegetables are a broad product category, and IQF is one way of producing them. The useful comparison for a buyer is therefore not simply “IQF or frozen.” It is whether the freezing method and finished format suit the way the ingredient will be stored, portioned and cooked.
Individual quick freezing is designed to leave separate pieces that can flow and be portioned while frozen. Other products may be frozen together in blocks or portions. A block can also be frozen rapidly, so the appearance of the pack does not, by itself, tell you how quickly the food passed through the freezing process. Rapid freezing generally produces smaller ice crystals than slower freezing. However, raw material, preparation and subsequent temperature control also affect quality. An IQF description alone cannot establish the texture, color or condition of a shipment. [1]
Loose onion dice can be weighed into a sauce batch. Broccoli florets can be placed individually in meal trays. A kitchen can take part of a bag of mixed vegetables and keep the remainder under its approved frozen-storage procedure. These applications benefit from a product that separates without an extra breaking or thawing step. The advantage is less important when an entire package goes into one production batch. For a puree or ingredient that will be fully dispersed, a larger frozen portion may work well if the equipment and process can handle it.
Request samples with the same vegetable variety or comparable raw material, cut size and processing status. Cook them under the same conditions and record finished yield, liquid release, piece integrity and dosing performance. Comparing blanched IQF vegetables with a differently prepared alternative can confuse the effect of freezing with the effect of processing. Include labor and handling in the comparison. A lower ingredient price may be offset by extra preparation, while a more expensive free-flowing format may offer little benefit if every pack is emptied at once.
A useful purchase specification identifies the vegetable, cut, processing treatment, acceptable clumping, packaging and intended use. Ask how the supplier assesses free-flowing condition and how the product should be handled after opening. Choose the format that delivers repeatable results in your application. IQF is particularly useful when separation and flexible dosing matter, but the final decision should come from the complete specification and a production trial.
